Chocolate Trifle

Cant WAIT to make this!!!


Instant Pudding
Angel Food cake- cubed
Heath chips- 1 package
Whipped Cream


Layer in glass bowl or trifle dish. EAT!



Breakfast Casserole

Stolen. 



2 lb browned sausage
12 eggs
2 cups shredded cheddar cheese
1 can mushrooms
1 can cheddar cheese soup
1 pint sour cream

combine and pour into a 9 X 13 casserole, sprayed with pam, cover with bread crumbs. bake at 350* for 40-60 minutes until top is browned and eggs are "set"
Another stolen recipe I cant wait to try!! Actually low in fat!

1 cup flour
3/4 cup sugar
2 Tbsp cocoa
2 tsp baking powder
1/2 tsp salt
1/2 cup milk
2 Tbsp veg. oil
1 tsp vanilla
1 cup chopped nuts--optional (I usually dont use since the boys hate nuts.)

combine dry ingredient in a 3 qt microwave safe casserole. stir in milk, oil, vanilla, nuts.

1 cup brown sugar
1/4 cup cocoa
1 and 3/4 cup hot water

sprinkle brown sugar and cocoa over top of batter. Pour hot water over top of cocoa and brown suger. DO NOT STIR! (It will look like you've ruined it but be patient.) Microwave uncovered at 50% power for 9 minutes. Rotate casserole 1/4 turn and microwave at 100% (high) until top is almost dry 5-7 minutes. Serve with vanilla ice cream or frozen yogurt.

Pesto Pizza

So the other night I went to one of my favorite Thirty-One hostesses house for a party and she had made homemade pizza. I DEMANDED the recipe, so I face-lifted it from one of the guests at the party on her FB page. Here it is. it was DELISH!!!



Pesto
2 cups of basil                                                       ½ cup Parmesan
½ cup olive oil                                                         ½ tsp salt
1-2 cloves garlic
In food processor (or blender), puree garlic, and then add basil and oil, one third at a time.  When pureed, add cheese and salt, folding in by hand.  Serve with cooked pasta. You can also use 1 cup basil and 1 cup spinach. 
I sauteed the chicken in one Tbsp  olive oil and a couple of cloves of garlic in a cast iron skillet.  One breast was enough for one pizza.  Left over roasted chicken would also work.  I used about one third of the pesto on the pizza.  We will have pesto pasta in the next day or so.
  Right now when fresh basil is so easily obtained, I make as much pesto as I can and put it in the freezer.  I dont add the parmesan to freeze.  When we are ready to eat, I thaw the pesto, add the cheese and one ladle of pasta water to thin the pesto.  This recipe makes enough for 2 lbs of pasta. You can add pine nuts or walnuts but the boys didnt care for them when they were little and since I make pesto with my preKs, I often have a student with tree nut allergies, we are used to eating it without the nuts.

Fettucini Alfredo + shrimp or chicken

Made this the other night, was delish!

Now you can cheat and use store bought Alfredo sauce (which I did). I have tried almost all the brands, Ragu, Bertoli, Classico, and Preggo. I liked the Classico the best. (four cheese kind). OR you can make homemade which is very simple and you can alter it to your tastes.
Recipe:
1/2 cup butter
1 pkg. (8 oz.) cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (or more to suit your tastes)
pepper, to taste


1. In a medium saucepan, melt butter.
2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.
3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.
4. Once it's mixed well and sauce like, take it off the burner and set aside so it can thicken up. Stir every few moments.
5. DONE!

While you are cooking the sauce, cook your noodles. Fettuccine noodles usually need to cook around 12 minutes. Add in some salt and spray a dash of Pam in the pan to keep them from sticking.

You can eat your Fettuccine Alfredo just like this or add in Shrimp or Chicken.
For chicken- cook boneless skinless chicken breasts in a small skillet with salt, pepper, garlic powder, oregano and cut into small strips when done and mix in with pasta before adding sauce.
For shrimp- I bought a bag of frozen peeled, cooked shrimp. (make sure you remove the tails). cook them for about 2 minutes in a small skillet with some butter and garlic, then toss in with the noodles and sauce.

Serve with breadsticks or garlic bread. 

Easy Beef Stew or Pot Roast Ideas

This is totally cheating, but its super simple and easy. Now that school is back in, and nights will get busy and colder (hopefully soon!!) I am making more simple easy dishes for posting here.

Most grocery stores offer the "kits" for beef stew or pot roast. You cannot beat these! If your store does not sell these, all that is included in them is:
potatoes (the kits come with the small red potatoes or new potatoes but you can use regular ones cut in half)
carrots (whole baby carrots)
1 small onion
1 package of beef stew meat or a beef roast.
1 package of seasoning. I prefer the Lipton Onion Soup mix, but there are lots of beef stew seasoning packets by McCormick as well.

All you need to do is dump everything in your crock pot, mix the seasoning with a cup of water (or as prepared) and cook for 8 hours. Dinner is Done!

Tyson also makes dinner kits for beef fajitas that include onion, steak strips, peppers, and seasonings. Another great easy dinner for your crock pot.


Red Beans & Rice with Cheesy Chicken

Tonight I started cooking this at 6:10 and had it on the table ready to eat at 6:30. SUPER yummy. This is for 2 people and it was perfect, so double for 4, etc.

1 pack of Knorr sides RedBeans & Rice (you could use UncleBens or any brand) 
2 boneless skinless chicken breasts (or 1 per person) (mine were frozen)
shredded cheese ( I used mexican blend cause its all I had)

Cook rice according to directions
In a small skillet, put in the chicken breasts. 
      NOTE: If you have time to thaw them out, cut them into bite size chunks first. Mine were frozen so I had to cook then chunk
Add in seasoning. I used McCormick Kickin Chicken which is GREAT, but you can use a combo of :
         seasoning salt, pepper, garlic powder, cayenne pepper. 

Cook the chicken about 10 minutes or until done. 
When rice is done, cover and let sit for 2 minutes to thicken. Mix in shredded cheese and stir until melted.
When chicken is done, mix it in with the rice and add a little more cheese if you need to. 
Done!
When cooked this way, it is not too spicy, so I added in a little hot sauce or my favorite (taco bell fire sauce- it has a WONDERFUL flavor thats not too spicy). 
Serve alone or with tortillas.
